Recipe: The "Winter Guardian" Root & Lentil Stew
This recipe is a nutritional powerhouse designed for gut health (via high-fiber lentils and roots), anti-inflammation (turmeric and ginger), and immune support. It focuses on "earthing" energy to keep you grounded during the cold winter months.

Ingredients:
The Base: 1 large onion, 3 cloves garlic (crushed), 1-inch fresh ginger (grated).
The Roots: 2 large carrots, 1 sweet potato, and 1 parsnip (all cubed).
The Protein: 1 cup dry red lentils (rinsed).
The Greens: 2 cups chopped Lacinato kale (ribs removed).
The Healing Spices: 1 tsp ground turmeric, ½ tsp black pepper, and a pinch of cayenne.
The Liquid: 4–6 cups of water or homemade bone/vegetable broth.
The Finish: Juice of ½ lemon and a drizzle of extra virgin olive oil.
Instructions:
Sauté: In a large pot, warm a splash of water or olive oil. Add the onion, garlic, and ginger. Sauté until fragrant (about 3 minutes).
Season: Add the turmeric and black pepper. Stir for 1 minute to "bloom" the spices.
Simmer: Toss in the carrots, sweet potato, parsnip, and lentils. Pour in your liquid. Bring to a boil, then reduce heat and simmer for 20–25 minutes until the lentils are soft.
Wilt: Stir in the kale during the last 3 minutes of cooking until it’s bright green.
Activate: Turn off the heat. Stir in the lemon juice to maximize iron absorption.
