Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:
1 cup whole milk
1 cup plain Greek yogurt, or sour cream
2 eggs
3 tablespoons butter, melted
1 teaspoon vanilla
1 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon cinnamon
Pinch kosher salt
15 ounce can Peach Slices in 100% Fruit Juice, drained or 2 fresh peaches
Instructions:
Heat waffle iron.
In a bowl (or blender), whisk the milk, Greek yogurt or sour cream, eggs, melted butter, and vanilla.
In a large bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and a pinch of salt.
Form a well in the center and add the wet mixture to the dry to form a smooth your batter.
Chop peach slices into small pieces to fill ½ to ¾ cup and save remaining slices for topping. Add chopped peaches to the batter and mix to combine.
When iron is hot, spray lightly with non-stick spray (if necessary). Fill your waffle iron with enough batter to fill the cavity (this will vary by waffle iron) and cook until a golden brown crust forms.
Serve waffles warm, topped with whipped cream and peach syrup.
