Recipe: Fluffy Peach Waffles

Ingredients:

  • 1 cup whole milk

  • 1 cup plain Greek yogurt, or sour cream

  • 2 eggs

  • 3 tablespoons butter, melted

  • 1 teaspoon vanilla

  • 1 ½ cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon cinnamon

  • Pinch kosher salt

  • 15 ounce can Peach Slices in 100% Fruit Juice, drained or 2 fresh peaches

Fluffy Peach Waffles

Instructions:

  1. Heat waffle iron.

  2. In a bowl (or blender), whisk the milk, Greek yogurt or sour cream, eggs, melted butter, and vanilla.

  3. In a large bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and a pinch of salt.

  4. Form a well in the center and add the wet mixture to the dry to form a smooth your batter.

  5. Chop peach slices into small pieces to fill ½ to ¾ cup and save remaining slices for topping. Add chopped peaches to the batter and mix to combine.

  6. When iron is hot, spray lightly with non-stick spray (if necessary). Fill your waffle iron with enough batter to fill the cavity (this will vary by waffle iron) and cook until a golden brown crust forms.

  7. Serve waffles warm, topped with whipped cream and peach syrup.
